Turkish Delight for Narnia fans
Don't eat too much or something might happen! ;-)
5 Tablespoons corn starch
1/2 cup cold water
1/2 cup hot water
2 cup sugar
1/2 cup orange juice
1 teaspoon rosewater (or lemon juice)
2 cup pistacios (or other nuts, if you like)
Powdered confectioner's sugar
Mix corn starch with cold water and set aside. In a medium-sized pot, bring hot water, sugar and orange juice to a boil. Add corn starch and simmer for 15 minutes, stirring often.
Remove from heat, add rosewater or lemon juice. Stir in nuts and pour into a buttered pan. Allow to cool and thicken.
With a knife dipped into hot water, cut into one-inch cubes with knife. Roll in powdered sugar and serve.
