Fruit Salad with Cream Cheese Jello

This is a spin-off of the popular almond jello dessert served at Chinese restaurants. (Thank you, Traci!)

Cream Cheese Jello:

8 oz cream cheese, softened
1 cup sugar
2 cans mandarin oranges, undrained
4 envelopes Knox unflavored gelatin
1/2 cup cool water
1 cup hot water (microwaved for 1 min. works)
1 cup 7up or lemon lime flavored soda

Blend together softened cream cheese, sugar and 2 T juice from mandarin oranges. Mix well until blended.

In a separate bowl, mix Knox gelatin with cool water. When dissolved, add hot water and mix thoroughly.

Add cream cheese mixture to gelatin mixture and mix well. Add 7up or lemon lime soda and mix again. Pour in mandarin oranges with remaining juice from can.

Pour into a greased 9" x 13" glass pan and refrigerate until firm. Cut into small cubes.

For Fruit Salad:

Toss together:
Cantaloupe, cubed
Watermelon, cubed
Honeydew melon, cubed
Cream Cheese Jello cubes
